It is best to peel white asparagus, but there is no need to peel green asparagus. Cut off tough ends before cooking. As a rule of thumb, one bunch of asparagus is about 16 individual spears or about one pound.

Crispy Asparagus Filo Wraps
1 package frozen filo pastry, thawed
1 bunch asparagus
1/3 cup butter, melted
Cut filo pastry in half. Rinse asparagus and cut off tough ends. Brush a little butter onto one side of the filo pastry. Place one asparagus spear on the end of the pastry and roll. Seal with butter and place seal side down in a baking dish. Bake in oven at 400F degrees (200C) for 10 to 12 minutes until golden brown. Serve with ranch dressing on the side for dipping.
Roasted Asparagus
1 bunch asparagus
extra virgin olive oil
salt and pepper
Parmesan cheese
Rinse asparagus and cut ends off. Lightly coat asparagus with olive oil, salt, and pepper. Place asparagus in a baking dish that has been coated with olive oil. Bake in oven at 400F degrees (200C) for 10 to 15 minutes. Serve on a white plate and top with finely shredded Parmesan cheese.
