Can't Beet this Chocolate Cake!

My mum had all this beetroot and didn't know what to do with it so I made this cake. I was surprised how good it tasted. This is a chocolate cake recipe with a secret ingredient (beetroot) that makes it taste even better than any other chocolate cake!!! You'll be surprised.
INGREDIENTS
2 cups cooked beetroot (beets)
2 teaspoon vanilla essence
1 cup brown sugar
1 1/2 cups extra light olive oil
4 free range eggs
2 1/2 cups flour
2 teaspoons bi-carb soda (baking soda)
2 teaspoons salt
1/2 cup cocoa powder
icing sugar and ice cream (to serve)
UTENSILS
3 bowls
blender
electric beater (if possible)
Pre-heat the oven to 180C degrees (350F).
In a blender, blend beetroot and vanilla and pour it into a bowl.
In another bowl beat together on low, sugar, oil and eggs.
In the third bowl beat together on low flour, bi-carb soda, salt and cocoa powder.
Combine the contents of bowl 1, bowl 2 and bowl 3.
Pour mixture into a cake tin and bake for about 40 minutes or until a fork comes out clean. Cool for a few minutes and sift icing sugar on top of the cake. Serve with vanilla ice cream.
