Cauliflower with Cheese Sauce
2 cups cauliflower florets
1/2 cup mushrooms, sliced
1 clove garlic, finely minced
1 tablespoon oil
1 tablespoon or 1/8 stick butter
1/3 cup milk
1/3 cup cheddar cheese, shredded
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon thyme
Rinse cauliflower and cut into florets. Boil a small amount of water in a saucepan and cook cauliflower covered in pan for about 10 minutes until tender but still slightly crisp. Drain water and set aside cauliflower.
Cook mushrooms with garlic in oil until mushrooms are well cooked.
Melt butter, then flour and milk and cook until thick and bubbly. Add cheese, salt, pepper, and thyme and stir until cheese is melted. Add cauliflower and mushrooms and stir to coat. Serve in a large serving bowl.
