Serve this delicious chicken marinara recipe with some polenta for a fancy meal, or just make a sandwich using a soft French sandwich roll.

Ingredients:

10 chicken breasts
Garlic salt
Black pepper
½ cup bread crumbs
¼ cup Parmesan cheese
2 Tablespoons chopped parsley
¼ cup canola oil (for frying)
¼ cup light olive oil (for frying)
2 cups mozzarella cheese
¼ cup Parmesan cheese
2 cups marinara sauce

Directions:

First, season chicken with garlic salt and pepper. Pound chicken with a mallet until it is ½ inch thin. Season with garlic salt and pepper.

Cover with a mixture of bread crumbs, Parmesan cheese and chopped parsley. Fry chicken patties in hot canola and olive oil until both sides are brown (approximately 3 minutes per side).

Lay chicken on a casserole dish. Cover chicken with marinara sauce. Then, top with mozzarella cheese and Parmesan cheese. Bake at 350F (180C) degrees for 30-35 minutes or until bubbly. Enjoy!

How this chicken recipe was born:

It was another busy day, and I just didn't know what to make for dinner. I wanted something easy, yet scrumptious. I had to make something with the only ingredient at hand - chicken breasts. I was craving Italian flavors, so I thought of Chicken Marinara. It sounded complicated, but due to time constraints, I had to keep it simple. Well, here it is!
