Brie Burgers
1 pound ground beef
1 clove garlic, minced
1 small yellow onion, chopped
2 tablespoons tomato paste
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried basil
3 ounces brie cheese
Romaine lettuce
1 small jar raspberry jam
1 loaf soft French bread
In a large bowl, mix together by hand ground beef, garlic, onion, salt, pepper, and basil. Divide into 6 small balls then poke a small hole with your finger in the middle of each ball. Stuff a piece of brie cheese (about 3/4 inch square) into the hole, then shape around to cover the hole and form patties.
Grill on a hot barbecue for 3-4 minutes on each side. Slice French bread and place lettuce on top, then the patty. Top with a nice dollop of raspberry jam.
Serve burgers open faced. The combination of the raspberry jam and melted brie cheese gives you a burst of delicious flavor.
