Hockey Puck Cookies

I grew up in hockey country and we would make this favorite cookie each year at Christmas.

1 box of Ritz crackers
1 jar of peanut butter
1 package of almond bark

Using a butter knife, spread about a tablespoon of peanut butter on a Ritz cracker. Place a cracker on top of the peanut butter, creating a sandwich.

Put almond bark in a pan over medium low heat and stir constantly until melted. Remove from heat. Using tongs or a fork, place Ritz peanut butter sandwiches into the chocolate and cover with chocolate. Let cool and enjoy!

Optional: Drizzle with white chocolate or sprinkles.
