Holiday No Bake Cookies
This recipe is easy to make so kids love it. Some supervision and they can have made cookies for you during the holidays.
This recipe my dad made from the time I was small child back in the 50's. It is different than the ones I see on the Net though. It has been passed down now to my children who have been making it since they were pre-teens.
1 stick butter (not margarine)
2 cups sugar
1/2 cup milk
Bring these ingredients to a boil on medium high, then once at a rolling boil while stirring constantly. Boil 1 minute.
Turn off stove and quickly add:
1 teaspoon vanilla
1 cup chocolate chips (I sometimes add a few extra)
1 cup peanut butter (I add 2 tablespoons extra here for my tastes)
3 cups quick oatmeal
Stir together quickly until melted, then drop by spoonfuls on wax paper.
Options for this recipe are:
Add raisins
Use butterscotch chips instead of chocolate
Use crunchy peanut butter instead of creamy peanut butter
