Pork Recipes
Kids love to eat pork. Pork adds variety to kids diets and if you buy lean pork, it is a healthy eating choice. So enjoy these quick and easy pork recipes anyone can make.
Baby Back Pork Spare Ribs
4 pounds pork spare ribs
1/2 onion, chopped
1 garlic clove, minced
1/4 cup soy sauce
1/8 cup apple cider vinegar
1/8 cup balsamic vinegar
2 tablespoons honey
1 tablespoon olive oil
Fill large pot two thirds full with water. Add garlic, onions, and pork spare ribs. Bring water to a boil, reduce and simmer covered for about 15 minutes on low heat until ribs are tender. Remove ribs from pot. Set pork broth aside and serve for soup.
In a small saucepan, mix together soy sauce, vinegar, honey, and oil. Cook on low heat until honey is melted. Marinate ribs in sauce mixture for 2 hours.
Place ribs on grill pan and broil on both sides for about 5 minutes each side until ribs are golden and slightly crispy on the outside.
Pork Chops with Orange Rice
6 pork chops, 3/4" thick
salt and pepper
1 1/3 cup precooked white rice
1 cup Orange juice
1 can Chicken and rice soup
Brown pork chops on both sides in skillet, season with salt and pepper.
Place in 12"x 10"x2" baking dish. Pour orange juice over rice. Arrange pork chops on rice. Pour chicken soup over all. Cover and bake in oven, 350F degrees for 45 minutes. Uncover and
bake 10 minutes longer.

Mexican "Mole Verde" Pork
1 pound pork roast
2 large bay leaves
1 onion, cut in chunks
3 tablespoons sesame seeds
1/2 cup slivered almonds
1/2 cup pumpkin seeds
bunch of green onions
4 cloves garlic
3 green chillies, mild
green bell pepper (capsicum)
bunch of cilantro (coriander)
2 tablespoons ground cumin
2 cups pork stock
In a large stockpot, add 5 quarts of water then add pork, bay leaves, and onion. Bring to boil, then reduce heat, cover, and simmer for half an hour until pork is tender and you have a nice broth. Remove pork and cut into cubes.
In a blender, blend together green onions, garlic, green chillies, green pepper, and cilantro with 2 cups of stock. This
makes a lovely green mole sauce. Pour into a large mixing bowl.
Next toast almonds and seeds in a skillet. In a blender, add toasted almonds, seeds, and a little of the pork stock and blend. Add the sesame paste to the green mole sauce and stir. Then add pork cubes and stir. Serve with Spanish rice and tortillas.
Bok Choy and Pork Stir-Fry with Noodles
**Use yesterday's leftover roast pork, dice it up, and add to this quick dish. You can buy Hokkien noodles you find packaged fresh in the refrigerated section of your grocery store...
1 clove garlic, minced
1/2 onion, sliced
2 tablespoons peanut or vegetable oil
1 tablespoon grated ginger
1 pound cooked pork, diced
1 small bunch of baby bok choy
1 16 ounce package fresh Hokkien noodles
1/4 cup soy sauce
1/4 cup honey
2 green onions sliced
1/4 cup peanuts, chopped
Heat oil in wok or large frypan on high heat. Add garlic, onion, and ginger and stir fry for 2 minutes until onion is soft.
Add diced pork to stir fry for 1 to 2 minutes. Next trim ends of bok choy and cut into 2 inch long pieces then add to stir fry.
In a small bowl combine soy sauce and honey, mixing well. Add sauce mixture and noodles to pan and stir fry ingredients for 3 to 4 minutes until bok choy is cooked.
Top noodle stir fry with green onions and chopped peanuts for a simple Asian delight the whole family will enjoy. A great way to use leftovers!
Baked Ham
6 pound boneless ham
whole cloves
1 cup orange juice
2 tablespoons brown sugar
pineapple rings
maraschino cherries
Take a fully cooked boneless ham and cut diamond shapes across ham. Place whole cloves in ham. Mix orange juice and brown sugar and pour over ham. Bake at 325F degrees for 1 1/2 hours. Place pineapple rings and cherries in ham using toothpicks. Tastes delicious and looks beautiful.
Crunchy Pork Meatballs
1 pound ground pork
2 slices ham or salami, finely chopped
2 green onions, finely chopped
2 sprigs of parsley, finely chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup Swiss cheese, cubed
1 egg, beaten
1/2 cup cornflakes, crushed
Mix together pork, ham, green onions, and parsley in a large bowl, add salt and pepper. Form into small, firm balls. Place a cube of cheese into the center of each pork meatball, then roll to close the ball.
Dip balls into beaten egg, then roll into crushed cornflakes to coat. Next place pork balls on a lined and greased baking tray. Bake in a 375F oven for 15 minutes until golden brown on the outside and cooked thoroughly on the inside. Serve on a bed of white rice with applesauce.
Creamed Pork Chops
6 pork chops
salt and pepper to taste
1 tablespoon butter
3 carrots, peeled and chopped
1 teaspoon dried basil
3 teaspoons flour
1 cup light cream
Sprinkle salt and pepper on pork chops. Cook pork chops for 5 minutes in butter in a large skillet on medium heat. Turn over, then add chopped carrots to skillet. Cook for another 5 minutes or until no longer pink.
Remove pork chops and drain on paper towel. Add remaining ingredients to skillet and cook until gravy mixture becomes thick and bubbly. Add pork chops back to skillet and stir. Serve with boiled rice.
Maggie's Pork Roast
Boneless pork roast
1/4 cup apple cider vinegar
1/4 cup water
Salt and pepper to taste
1 cup or more BBQ sauce to taste
1/2 cup ketchup
Place pork, vinegar, and water in crock pot on low for 8 hours. Then, drain water and vinager out. Add BBQ sauce and ketchup. Shred pork into sauces with fork. Keep warm in crock pot until ready to serve. Serve on buns.
