Rhubarb Recipe?

Has anybody got any exciting Rhubarb recipes - I love Rhubarb - but don't like Rhubarb Crummble, does anyone have any other ideas for yummy puddings etc.

Rhubarb Fool

1 lb rhubarb
custard (ready made will do)
double cream
orange juice
ground ginger

Chop rhubarb into chunks. Place in roasting dish with about 50 ml of orange juice and sprinkle with ginger. Put into oven gas mark 5 or about 160C (325F) degrees.

Bake for 15 to 20 mins until rhubarb is soft.
Whip cream until it is all soft and fluffy then carefully stir in custard and rhubarb.

Put into serving dishes and chill. Also works well with strawberries and gooseberries.
